Here is a fun summer treat for those hot days.  Great treat for the children or the family.

Pour 1 1/3 cups orange juice into an ice cube tray and freeze until solid – about 3 hours.  Empty the tray into a blender or food processor and combine with 1 tablespoon of honey, 1 cup vanilla nonfat yogurt, and 1/4 cup frozen orange juice concentrate.  Blend until smooth and pour.  Makes 2 1/2 cups.

Frozen Pineapple Flower Pops

Frozen Flower Pops

When it’s hot out and the children are wilting from the baking sun, these fruity flowers will perk them right up!

Make the petals by cutting notches in a 1/2-thich fresh pineapple ring, then place a watermelon ball in the center.  For a leaf, skewer a slice of green apple, then push the skewer stem into the pineapple.  Place the floweer on a wax paper-covered tray, cover with plastic wrap and place in the freezer for about 1 hour.  Remove and watch the children’s eyes light up with this fresh fruit treat!

Watermelon Fruit Salad

While the ingredients may sound a bit strange, the combo of watermelon and feta cheese produces a delightful taste.

Begin by mixing 8 cups of cubed watermelon with 2 – 4 ounces of cubed or crumbled feta cheese.  Toss with a dressing made from 1 tablespoon lime juice, 1 tablespoon of extra-virgin olive oil, and then salt and pepper to taste.  Sprinkle the salad with slivered fresh basil or mint.  Serves 8.
